Spicy Ham and Vegetable Skillet with Baked Eggs recipe

This is a yummy breakfast with veggies, ham, and eggs. It has cheese and spicy flavors. You cook the veggies and ham in the oven, then put cheese on top. Cook eggs in a pan and put them on the hash. It's good for breakfast or brunch!

Ingredients

6 large eggs
3 cups frozen butternut squash, cubed
12 oz smoked turkey, diced
2 green bell peppers, diced
1 1/2 cups shredded sharp cheddar cheese
1 large red onion, diced
2 large zucchini, diced
1 tbsp Cajun seasoning
2 tbsp olive oil
1/2 tsp salt
1/2 tsp black pepper

Method

Preheat your oven to 450°F (230°C).

Get a big baking sheet and put diced green bell peppers, zucchini, and red onion on it.

Add the frozen butternut squash to the veggies.

Pour olive oil over the veggies. Sprinkle Cajun seasoning, salt, and black pepper on them. Mix everything so the veggies are coated.

Put the baking sheet in the oven. Let the veggies cook until they're a little soft, about 10 minutes.

While the veggies are in the oven, cut the smoked turkey into small pieces.

Take the baking sheet out of the oven. Put the turkey with the veggies and mix them up.

Sprinkle the cheddar cheese over everything.

Put the baking sheet back in the oven. Bake until the veggies are soft and the cheese is melted, about 5 more minutes.

While the cheese is melting, put a big skillet on the stove over medium-high heat. Add a little oil.

Crack the eggs into the skillet. Cook them until the egg whites are cooked but the yolks are still runny, about 4 minutes.

Take the skillet off the stove. Put a little salt on the eggs.

Put some of the veggie and turkey hash on plates. Add the cooked eggs on top.

Now it's ready to eat. Enjoy your meal!
