Spicy Grilled Chicken with Avocado & Roasted Pepper Sandwich recipe


This is a yummy sandwich with grilled chicken and avocado. It has a spicy taste and is put in a toasted bun. You also get a tasty salad with peppers and spinach.


4 boneless skinless chicken breasts
1 tbsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
1/2 tsp cayenne pepper
1/2 tsp salt
1/4 tsp black pepper
2 tbsp olive oil
2 red bell peppers
4 whole grain buns
1 ripe avocado
1 cup baby spinach
1 tbsp mayonnaise
1 tsp lemon juice


Preheat your grill or skillet over medium heat.
Mix smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper in a bowl to create the spice rub.
Rub the spice mixture all over the chicken breasts.
Brush the grill or skillet with olive oil and cook the chicken for about 6-7 minutes on each side, or until fully cooked.
While the chicken is cooking, slice the red bell peppers and grill them until they are soft and have grill marks.
In a small bowl, mix mayonnaise with lemon juice to create a creamy spread.
Toast the whole grain buns on the grill or skillet.
Mash the avocado and spread it on the bottom half of each bun.
Place a grilled chicken breast on top of the avocado.
Add the grilled red bell peppers and baby spinach on top of the chicken.
Spread the mayonnaise mixture on the top half of the buns and place them on top of the spinach.
Serve the sandwich immediately with your choice of side.
