Spicy Grilled Chicken and Mixed Greens Salad recipe


This is a yummy salad with grilled chicken, mixed greens, and a tangy dressing. The chicken is spicy and the salad has cheese, tomatoes, and a special dressing. It's a healthy meal that tastes great!


2 boneless skinless chicken breasts
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon dried oregano
1/4 teaspoon cayenne pepper
1/4 teaspoon dried thyme
1/4 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons extra virgin olive oil
6 cups mixed salad greens
1/2 cup shredded mozzarella cheese
1 cup cherry tomatoes, halved
1/2 red onion, thinly sliced
1/4 cup plain Greek yogurt
1 tablespoon white wine vinegar
1 tablespoon water
1 tablespoon chopped fresh parsley


In a small bowl, combine smoked paprika, garlic powder, dried oregano, cayenne pepper, dried thyme, salt, and black pepper to make the spice mix.
Rub the spice mix all over the chicken breasts.
Heat a grill pan over medium-high heat and brush with 1 tablespoon of olive oil.
Grill the chicken for about 10 minutes on each side, or until fully cooked and slightly charred. Let it rest for 5 minutes, then slice into strips.
In a large bowl, toss the mixed salad greens, shredded mozzarella cheese, cherry tomatoes, and red onion slices.
For the dressing, whisk together Greek yogurt, white wine vinegar, water, remaining olive oil, and chopped parsley in a small bowl until smooth. Add more water if needed to reach the desired consistency.
Divide the salad among plates, top with grilled chicken strips, and drizzle with the yogurt dressing before serving.
