Spicy Chicken, Sweet Potato, and Green Bean Tray Bake recipe


This is a yummy tray bake with spicy chicken, sweet potatoes, and green beans. It's cooked in the oven and topped with sour cream. It's a warm and filling meal that's perfect for dinner.


1 lb boneless, skinless chicken breasts
1 lb sweet potatoes
1 cup sour cream
1 tbsp chili powder
2 green bell peppers
1 large red onion
1 lb green beans
1 tsp smoked paprika
2 tbsp olive oil
1/2 tsp salt
1/4 tsp black pepper


Preheat the oven to 450°F (230°C).
Wash and dry all the fresh produce.
Peel and cut the sweet potatoes into 1-inch cubes; transfer to a large baking sheet.
Trim the ends of the green beans and cut the green bell peppers into 1-inch pieces. Peel and cut the red onion into wedges. Add the green beans, bell peppers, and onion to the baking sheet with the sweet potatoes.
Drizzle the vegetables with olive oil, sprinkle with chili powder, smoked paprika, salt, and black pepper; toss to combine and spread out in an even layer.
Cut the chicken breasts into 1-inch pieces and place them on the baking sheet with the vegetables.
Place the baking sheet in the oven and roast until the vegetables are tender and the chicken is cooked through, about 25-30 minutes, tossing halfway through.
Remove the baking sheet from the oven.
To serve, divide the chicken and vegetable mixture between plates or bowls; top with a dollop of sour cream. Enjoy!
