Spicy Chicken Salad with Feta, Mixed Greens & Creamy Dressing recipe


This is a yummy salad with spicy chicken, crunchy veggies, and creamy dressing. It has cheese, lettuce, and dressing. You mix it all in a big bowl and eat it on plates.


2 ripe avocados
3 sticks celery
150 g feta cheese, crumbled
1 small bunch cilantro
180 ml creamy Caesar dressing
1 x 850 g whole rotisserie chicken, white and dark meat
150 g shredded red cabbage
2 x 142 g packages of baby spinach
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper
1/4 teaspoon salt


Wash and dry the cilantro and baby spinach if they are not pre-washed.
Remove cilantro leaves from the stems; discard stems and chop the leaves finely. Place in a large bowl.
Add Caesar dressing, cayenne pepper, salt, and black pepper to the bowl with the cilantro; stir to combine.
Trim and thinly slice the celery crosswise; add to the bowl.
Halve and pit the avocados; scoop out with a spoon and cut into small cubes. Add to the bowl.
Place the chicken on a cutting board and remove the meat from the skin and bones. Shred the meat and add to the bowl.
Add baby spinach and shredded red cabbage to the bowl; toss to combine the salad.
To serve, divide the salad between plates or bowls and sprinkle with crumbled feta cheese. Enjoy!
