Spicy Chicken Lettuce Wraps with Corn Salsa & Sour Cream recipe

This is a yummy dish with spicy chicken, corn, and cheese wrapped in lettuce. It's like a taco, but with lettuce instead of a shell. You can make it in less than 30 minutes. It's fun to eat with your hands!

Ingredients

1 lb ground chicken
1 (15 oz) can black beans, drained and rinsed
1 (15 oz) can corn, drained
1 cup cherry tomatoes, quartered
1/4 cup red onion, finely chopped
1 jalapeño, seeded and minced
1 cup shredded cheddar cheese
1/2 cup sour cream
2 tablespoons taco seasoning
1 tablespoon olive oil
4 large romaine lettuce leaves
1 lime, cut into wedges

Method

Wash and dry the lettuce leaves, cherry tomatoes, jalapeño, and lime.

Quarter the cherry tomatoes, finely chop the red onion, mince the jalapeño, and cut the lime into wedges. Set aside.

In a bowl, mix the corn, cherry tomatoes, red onion, and jalapeño to make a corn salsa. Squeeze a lime wedge over the salsa and mix again.

Heat a skillet over medium-high heat with 1 tablespoon of olive oil.

Add the ground chicken to the skillet and cook for about 3 minutes, breaking it apart with a spoon.

Stir in the taco seasoning and continue cooking until the chicken is no longer pink, about 2-3 minutes more.

Add the black beans to the chicken and cook until heated through, about 2 minutes. Remove from heat.

Lay out the romaine lettuce leaves on plates to act as wraps.

Spoon the chicken and bean mixture into each lettuce leaf.

Top the chicken with the corn salsa and shredded cheddar cheese.

Dollop sour cream on top of each wrap and serve with extra lime wedges on the side.
