Spicy Chicken Fajita Cauliflower Rice Bowl recipe

This is a yummy bowl with spicy chicken, colorful peppers, and cauliflower rice. It has cheese and a special lime sour cream. It's like a burrito but without the wrap!

Ingredients

2 x (12 oz) bags frozen, riced cauliflower
1 tbsp olive oil
1/2 cup water
1/2 tsp salt
1 lb chicken breast, thinly sliced
1 tbsp fajita seasoning
1 yellow bell pepper, sliced
1 orange bell pepper, sliced
1 cup shredded cheddar cheese
1/2 cup sour cream
1 tbsp lime juice
1/4 tsp garlic powder
1/4 cup chopped fresh cilantro

Preheat the oven to 450°F (230°C).

Spread the riced cauliflower on a baking sheet and drizzle with 1/2 tbsp olive oil and 1/4 tsp salt. Roast in the oven for 15 minutes, stirring halfway through.

While the cauliflower is roasting, heat the remaining 1/2 tbsp olive oil in a large skillet over medium-high heat.

Season the chicken slices with fajita seasoning and cook in the skillet for 5-7 minutes, or until fully cooked.

Add the yellow and orange bell pepper slices to the skillet with the chicken and cook for an additional 3 minutes, until the peppers are slightly softened.

In a small bowl, mix together the sour cream, lime juice, garlic powder, and a pinch of salt to create a lime sour cream.

Remove the roasted cauliflower from the oven and let it cool slightly.

Assemble the bowls by dividing the cauliflower rice among them, then top with the chicken and pepper mixture, shredded cheddar cheese, and a dollop of lime sour cream.

Garnish with chopped fresh cilantro and serve immediately.
