Spicy Chicken and Vegetable Rice Bowl recipe


This is a yummy rice bowl with spicy chicken and lots of veggies. You cook chicken with spices and mix it with rice and vegetables. It's a colorful and tasty meal for lunch or dinner.


2 cups of basmati rice
4 chicken breasts
1 red bell pepper
1 yellow bell pepper
1 green bell pepper
1 large red onion
2 ears of corn
1 lime
1 tablespoon of chili powder
1 tablespoon of smoked paprika
1/2 cup of fresh cilantro
1 teaspoon of dried oregano
3 cloves of garlic, minced
2 tablespoons of olive oil
Salt to taste
Black pepper to taste


Preheat your oven to 180°C (356°F).
Cook the basmati rice according to the package instructions and set aside.
Place the chicken breasts on a baking tray. Mix 1 tablespoon of chili powder, 1 tablespoon of smoked paprika, salt, and black pepper in a small bowl. Rub the spice mixture onto the chicken breasts with 1 tablespoon of olive oil. Bake in the oven for 30 minutes or until fully cooked.
While the chicken is cooking, chop the bell peppers and red onion into large chunks. Place them on a baking tray with the ears of corn. Drizzle with the remaining olive oil and season with salt and pepper. Roast in the oven for 30 minutes.
Once the chicken is cooked, remove it from the oven and let it rest for a few minutes. Then, using two forks, shred the chicken into bite-sized pieces.
Cut the corn kernels off the cob and add them to a large mixing bowl along with the roasted bell peppers, red onion, and shredded chicken.
Add the cooked rice to the mixing bowl with the chicken and vegetables. Squeeze the juice of one lime over the mixture, add the minced garlic, dried oregano, and half of the chopped cilantro. Mix everything together until well combined.
Serve the spicy chicken and vegetable rice bowl garnished with the remaining cilantro. Enjoy your flavorful and colorful meal!
