Spicy Chicken Almond Stir-Fry Noodles recipe

This dish is a yummy noodle stir-fry with chicken and almonds. It's spicy and has a sauce made from almond butter. You cook chicken, mix with noodles and sauce, and top with green onions and red pepper.

Ingredients

6 Tbsp almond butter
3 Tbsp hoisin sauce
1 Tbsp brown sugar
2 Tbsp rice vinegar
1 bunch of green onions
200 g rice noodles
2 boneless chicken breasts
3 garlic cloves
1 inch piece of ginger
1 tsp red pepper flakes
1 red bell pepper
2 Tbsp sesame oil
1 Tbsp vegetable oil
1/4 cup roasted almonds, chopped
Salt to taste

Method

Cut the chicken into small pieces and season with salt.

Mince the garlic and ginger, and thinly slice the green onions and red bell pepper.

In a bowl, whisk together almond butter, hoisin sauce, brown sugar, rice vinegar, and 120ml of water until smooth to make the sauce.

Cook the rice noodles according to the package instructions, rinse under cold water, drain, and then toss with 1 tablespoon of sesame oil to prevent sticking.

Heat the vegetable oil in a large frying pan or wok over medium-high heat. Add the chicken pieces and cook until browned and cooked through.

Add the garlic, ginger, and red pepper flakes to the chicken and stir fry for 1 minute.

Add the cooked noodles, almond sauce, and green onions to the pan with the chicken and toss well to coat.

Stir fry for another 2-3 minutes on low heat until everything is heated through and the sauce coats the noodles well.

Remove from heat, drizzle with the remaining tablespoon of sesame oil, and garnish with chopped roasted almonds and sliced red bell pepper.
