Spicy Black Bean and Turkey Melt recipe

This is a yummy sandwich with beans, turkey, and cheese. It's spicy and cheesy. You cook it in a pan until it's crispy. It's good for lunch or dinner and not too hard to make.

Ingredients

200 g ground turkey
1 small onion, diced
2 cloves garlic, minced
1 jalapeno, seeded and diced
1 tsp chili powder
1 tsp ground coriander
1 (400 g) can black beans, drained and rinsed
4 slices pepper jack cheese
8 slices whole grain bread
4 tbsp unsalted butter, softened
Salt and pepper to taste

Method

In a pan over medium heat, cook the ground turkey until browned, about 5 minutes. Season with salt and pepper.

Add the diced onion, minced garlic, and diced jalapeno to the pan with the turkey. Cook until the onion is soft, about 5 minutes.

Stir in the chili powder and ground coriander, cook for another minute.

Mix in the black beans and cook until heated through, about 3 minutes. Remove from heat and set aside to cool slightly.

Preheat another pan over medium heat for toasting the sandwiches.

Lay out the 8 slices of bread. Spread the turkey and bean mixture on 4 slices. Top each with a slice of pepper jack cheese and then the remaining bread slices.

Butter the outside of each sandwich and place in the preheated pan.

Cook for about 4 minutes on each side, or until the bread is golden brown and the cheese has melted.

Cut the sandwiches in half and serve warm.
