Spicy Black Bean and Quinoa Bowl with Avocado recipe

This is a yummy bowl with spicy black beans, fluffy quinoa, fresh veggies, and creamy avocado. It's a colorful meal that's fun to mix up. You can eat it with a spoon or scoop it with chips!

Ingredients

1 cup quinoa
2 x (15 oz) cans black beans
1/2 cup corn kernels
1/2 cup diced red bell pepper
1/2 cup chopped cilantro
1/4 cup diced red onion
1 cup diced cucumber
1 cup diced avocado
1/2 cup shredded cheddar cheese
1/2 cup sour cream
30 ml chipotle seasoning
1 jalapeno, sliced
2 limes, cut into wedges
3 oz tortilla chips

Method

Rinse the quinoa in a fine mesh strainer under cold water and drain.

In a medium saucepan, combine quinoa with 2 cups of water and bring to a boil. Cover, reduce heat to low, and simmer until quinoa is cooked and water is absorbed, about 15 minutes.

While the quinoa is cooking, drain and rinse the black beans and transfer them to a bowl. Mix in the chipotle seasoning.

In a separate bowl, combine the corn, red bell pepper, cilantro, red onion, and cucumber.

Once the quinoa is done, fluff it with a fork and let it cool for a few minutes.

Prepare the bowls by dividing the quinoa among them, then top with the seasoned black beans, vegetable mixture, diced avocado, and shredded cheese.

Serve each bowl with a dollop of sour cream, jalapeno slices, lime wedges, and tortilla chips on the side.
