Spicy BBQ Chicken Nachos recipe

This is a yummy dish with crunchy chips and spicy chicken. It has cheese, BBQ sauce, and a special avocado dip. It's fun to eat with your hands and share with friends!

Ingredients

1 Tbsp Chipotle Chilli Powder
1 Tbsp Smoked Paprika
1 Tbsp Brown Sugar
4 Cloves Garlic, minced
1 Onion, finely chopped
1 Tbsp Ground Cumin
1 Tbsp Dried Oregano
500 g Tortilla Chips
2 Chicken Breasts
4 Tbsps BBQ Sauce
1 Tbsp Apple Cider Vinegar
150 g Grated Mozzarella Cheese
1 Avocado
1 Lime, juiced
50 g Sliced Pickled Jalapenos
A handful of Fresh Cilantro, chopped
2 Tbsps Olive Oil

Method

Preheat oven to 200°C (392°F).

In a bowl, mix together chipotle chilli powder, smoked paprika, brown sugar, minced garlic, half of the chopped onion, cumin, oregano, and olive oil to create a marinade.

Cut the chicken breasts into small cubes and toss them in the marinade. Let sit for 10 minutes.

Spread tortilla chips on a baking sheet in a single layer.

In a pan over medium heat, cook the marinated chicken cubes until fully cooked, about 8-10 minutes.

In a small bowl, mix the BBQ sauce and apple cider vinegar. Pour this mixture over the cooked chicken and stir to coat.

Spoon the BBQ chicken over the tortilla chips. Sprinkle grated mozzarella cheese on top.

Bake in the preheated oven until the cheese is melted and bubbly, about 10 minutes.

While the nachos are baking, mash the avocado with the lime juice and remaining chopped onion to make a quick guacamole.

Once the nachos are done, top with guacamole, pickled jalapenos, and fresh cilantro. Serve immediately.
