This recipe turns plain crumpets into a warm, cheesy delight with a hint of spice. We spread crumpets with homemade spiced tomato chutney, then top them with gooey mozzarella cheese and fresh herbs. It's a tasty snack that's easy to make!

Ingredients

75 g unsalted butter, softened
1 tbsp tomato paste
1 tsp garam masala
1/2 tsp ground cumin
1/2 tsp paprika
1/2 tsp dried oregano
1/2 tsp honey
1/2 lime, juiced
1 small red onion, finely sliced
1 small green chili, finely chopped
125 g mozzarella cheese, sliced
6 crumpets
1 tbsp fresh coriander, chopped
1 tbsp olive oil

Method

In a small bowl, mix together the softened butter, tomato paste, garam masala, ground cumin, paprika, dried oregano, and honey to create a spiced tomato chutney butter.

In another bowl, combine the sliced red onion with lime juice and a pinch of salt. Massage the onions gently to soften, then set aside to pickle slightly.

Preheat the grill to a medium-high setting. Slice the mozzarella cheese and set aside.

Toast the crumpets until they are golden brown. Place them on a baking tray and spread each one with a generous amount of the spiced tomato chutney butter.

Top the buttered crumpets with slices of mozzarella cheese. Place under the grill and cook until the cheese is melted and bubbly, about 3-5 minutes.

Remove the crumpets from the grill and top with the pickled red onions, chopped green chili, and fresh coriander.
