Spiced Tofu Lettuce Wraps recipe

This recipe turns tofu into a delicious meal with a spicy twist, wrapped in fresh lettuce. It's a fun and healthy way to enjoy a flavorful dish with veggies and a creamy sauce.

Ingredients

450 g Firm Tofu
3 Medium Carrots
1 Tbsp Coconut Oil
3 Tbsp Tikka Masala Curry Paste
4 Tbsp Coconut Yogurt
20 g Fresh Cilantro Leaves
1/2 Cucumber
1 Medium Garlic Clove
12 Large Lettuce Leaves
2 Tbsp Almond Butter
1 Tbsp Lime Juice
1 Tbsp Soy Sauce
1 Tbsp Maple Syrup

Method

Drain the tofu and press it to remove excess water. Cut into 1 cm cubes.

Peel and julienne the carrots. Set aside.

Heat the coconut oil in a large frying pan over medium-high heat. Add the tofu cubes and tikka masala curry paste. Cook for 5 minutes, stirring occasionally, until the tofu is golden and coated with the paste.

While the tofu cooks, prepare the sauce. In a small bowl, whisk together the coconut yogurt, almond butter, lime juice, soy sauce, and maple syrup until smooth.

For the quick salad, chop the cucumber into small dice, mince the garlic, and roughly chop the cilantro leaves. Mix them in a bowl and set aside.

Remove the tofu from the heat once it's done.

Assemble the wraps by placing a few tofu cubes and some julienned carrots in the center of each lettuce leaf. Drizzle with the prepared sauce and top with the cucumber salad.

Serve immediately, allowing everyone to make their own wraps at the table.
