Spiced Lentil Hummus with Crispy Onions recipe

This is a yummy dip made with lentils and spices. It's creamy and has crunchy onions on top. You can dip veggies or chips in it. It's good for a snack or to share with friends.

Ingredients

1 x (250 g) Tin of Lentils
1 Garlic Clove
1 Tbsp Lemon Juice
3 Tbsp Greek Yogurt
1 Tbsp Tahini
1 Tbsp Curry Powder
6 Fresh Mint Leaves
1 Red Chilli
1 Medium Red Onion
4 Tbsp Vegetable Oil
Salt to taste

Method

Drain the lentils, saving the liquid, and add to a food processor along with minced garlic, lemon juice, Greek yogurt, tahini, and curry powder. Blend until smooth, adding a bit of reserved lentil water if needed to achieve a creamy consistency.

Chop the mint leaves finely and mix into the lentil blend. Season with salt to taste.

Thinly slice the red onion and red chilli. Heat the vegetable oil in a pan over medium heat, and fry the onion and chilli until they are crispy, about 5 minutes. Remove them from the oil and let them drain on a paper towel.

Transfer the lentil mixture to a serving bowl and garnish with the crispy onion and chilli. Serve with your choice of vegetables or chips for dipping.
