These cookies are like little chocolate mountains with cracks. They are sweet with a hint of spice and orange. You mix chocolate, flour, and other things to make a soft dough. Then you bake them until they look wrinkly and yummy!

Ingredients

150 g all-purpose flour
1 tsp baking powder
1/4 tsp salt
1 tsp ground cinnamon
1/4 tsp cayenne pepper
120 g unsalted butter
200 g 60% dark chocolate
3 tbsp cocoa powder
90 g granulated sugar
125 g light brown sugar
2 large eggs
1 tbsp orange zest
1 tsp vanilla extract
Powdered sugar for dusting

Method

1
Preheat your oven to 160°C (320°F) with the fan on. Line two baking trays with parchment paper.
2
In a small bowl, whisk together the flour, baking powder, cinnamon, cayenne pepper, and salt. Set aside.
3
Chop the dark chocolate into small pieces. In a saucepan, melt the butter over medium-low heat. Remove from heat and stir in the cocoa powder and chocolate until fully melted. Mix in the orange zest. Allow to cool slightly.
4
In a large mixing bowl, combine the granulated sugar, light brown sugar, vanilla extract, and eggs. Whisk for about 5 minutes until the mixture is pale and fluffy.
5
Gently fold the cooled chocolate mixture into the egg mixture until just combined.
6
Sift in the dry ingredients and fold until no streaks remain and a soft dough forms.
7
Using a tablespoon, scoop out the dough and roll into balls. Coat each ball in powdered sugar and place on the prepared baking trays, leaving space between each cookie.
8
Bake for 10-12 minutes, until the cookies have a domed appearance and the surface is shiny with cracks.
9
Allow the cookies to cool on the trays for a few minutes before transferring to a wire rack to cool completely.
