Spiced Chicken with Chickpeas & Mint Couscous recipe


This dish is a yummy chicken meal with spices and veggies. It has soft chicken, chickpeas, and couscous with mint. It's not hard to make and tastes really good!


480 ml chicken broth
680 g chicken thighs, boneless skinless
1 small bunch mint
3 cloves garlic
1 can (400 g) chickpeas, drained and rinsed
1 1/2 cups couscous
1 large red onion
1 tsp paprika
1/2 tsp turmeric
1 tbsp olive oil
Salt to taste
Black pepper to taste


Wash and chop the mint leaves finely. Peel and mince the garlic. Peel and chop the red onion.
Heat olive oil in a large pan over medium-high heat.
Season the chicken thighs with salt, pepper, paprika, and turmeric. Add to the pan and cook until browned, about 3-4 minutes per side. Transfer to a plate.
In the same pan, add the red onion and garlic. Cook until the onion is soft, about 3 minutes.
Add the chickpeas to the pan and cook for another 2 minutes.
Return the chicken to the pan. Pour in the chicken broth and bring to a simmer. Cover and let cook until the chicken is done, about 20 minutes.
While the chicken cooks, bring a separate pot of water to a boil. Add the couscous, remove from heat, and let it stand covered for 5 minutes. Fluff with a fork and stir in half of the chopped mint.
Serve the chicken and chickpeas with the mint couscous and garnish with the remaining mint.
