Smoky Chicken Tostadas with Pico de Gallo & Chipotle Mayo recipe


This is a yummy dish with crunchy tortillas topped with chicken, fresh pico de gallo, and spicy chipotle mayo. It's like a mini Mexican pizza! You cook the chicken, make the pico de gallo, and put it all on baked tortillas.


1/2 pint cherry tomatoes, diced
1/4 cup red onion, finely chopped
1 jalapeno, seeded and minced
1/4 cup fresh cilantro, chopped
1 tablespoon lime juice
Salt to taste
8 small corn tortillas
1 tablespoon extra virgin olive oil
8 oz smoked chicken breast, shredded
1/4 cup chipotle mayonnaise
1 heart romaine lettuce, shredded


Preheat oven to 400°F (205°C).
To make the pico de gallo, combine diced cherry tomatoes, chopped red onion, minced jalapeno, chopped cilantro, and lime juice in a bowl. Add salt to taste and set aside.
Brush both sides of the tortillas with olive oil and sprinkle with a pinch of salt. Arrange on a baking sheet and bake until golden brown and crispy, about 10-15 minutes, flipping halfway through.
While tortillas are baking, wash and dry the romaine lettuce and shred it.
To assemble the tostadas, spread each crispy tortilla with chipotle mayonnaise. Top with shredded smoked chicken, a generous spoonful of pico de gallo, and shredded lettuce.
Serve immediately and enjoy your smoky chicken tostadas!
