Smoky Bacon and Brussels Sprouts recipe

This dish mixes crispy bacon with green Brussels sprouts. It's cooked with garlic and balsamic for a yummy taste. It's a warm side dish that goes well with dinner.

Ingredients

800 g Brussels sprouts
200 g bacon strips
50 g pine nuts
1 bunch of fresh thyme
3 Tbsp balsamic vinegar
2 cloves of garlic
Salt to taste
Black pepper to taste

Method

Wash and trim the ends off the Brussels sprouts. Remove any loose leaves and cut all the Brussels sprouts in half.

Chop the bacon into small pieces.

Mince the garlic and strip the thyme leaves off their stems.

In a large pan over medium-high heat, cook the bacon pieces until they are crispy, about 5-7 minutes.

Add the minced garlic and thyme to the pan with the bacon and cook for another 2 minutes, until fragrant.

Add the halved Brussels sprouts to the pan and cook for 15 minutes, stirring occasionally, until they are tender and slightly charred.

While the sprouts are cooking, toast the pine nuts in a small dry pan over medium heat until golden, about 3 minutes, then set aside.

Stir the balsamic vinegar into the pan with the Brussels sprouts and bacon, and cook for another 2 minutes.

Season with salt and pepper to taste.

Serve the Brussels sprouts and bacon hot, sprinkled with the toasted pine nuts.
