Smoked Gouda, Pear & Caramelized Onion Quesadilla recipe

This is a yummy, cheesy quesadilla with sweet pears and tasty onions. It's like a sandwich, but with a crispy outside. You cook the onions until they're sweet, then put them with cheese and pear in a tortilla and cook it until it's golden.

Ingredients

1 ripe pear
1 large red onion
4 large whole wheat tortillas
200 g smoked gouda cheese
1 tablespoon balsamic vinegar
1 tablespoon honey
2 tablespoons olive oil
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon dried thyme
100 g mixed greens

Method

Wash and dry the pear and mixed greens.

Preheat a large skillet over medium heat.

Peel and thinly slice the red onion.

Add 1 tablespoon of olive oil to the skillet, then add the sliced onions, salt, pepper, and thyme. Cook, stirring occasionally, until onions are caramelized, about 10 minutes.

Drizzle the balsamic vinegar and honey over the onions, stir well, and cook for an additional 2 minutes. Remove from heat.

Core the pear and thinly slice it.

Grate the smoked gouda cheese.

Lay out the tortillas and evenly distribute the caramelized onions, pear slices, and grated cheese on one half of each tortilla; fold the other half over to close.

Wipe the skillet clean and return to medium heat with the remaining 1 tablespoon of olive oil.

Place the quesadillas in the skillet, in batches if necessary, and cook until the cheese is melted and the tortillas are golden brown, about 3 minutes per side.

Remove the quesadillas from the skillet, let them cool for a minute, then cut into wedges.

Serve the quesadilla wedges with a side of mixed greens.
