Shrimp Tacos with Pineapple Cilantro Salsa recipe

This is a yummy taco recipe with juicy shrimp and a sweet pineapple salsa. We use soft tortillas and add some tasty toppings. It's fun to make and eat!

Ingredients

500 g Raw Peeled Shrimp
2 Garlic Cloves
1 Tsp Chipotle Chili Powder
2 Tbsp Tomato Paste
1 Lime
1/2 Tsp Salt
1 Small Red Onion
1 Large Bunch of Cilantro (50 g)
3 Tbsp Olive Oil
2 Limes
1 Large Ripe Pineapple
1 Ripe Avocado
8 Flour Tortillas

Method

Preheat your grill or pan to medium-high heat.

Peel and mince the garlic. In a bowl, combine the shrimp with a drizzle of oil, chipotle chili powder, tomato paste, and minced garlic. Season with salt and pepper, mix well and set aside.

Peel and thinly slice the red onion. In a small bowl, add the onion with a pinch of salt and the juice from 1 lime. Stir and set aside to pickle.

Zest the remaining 2 limes into a large bowl. Chop the cilantro finely and add it to the bowl with the lime zest. Pour in 3 tablespoons of olive oil, season with salt, and squeeze in the juice from the 2 limes. Mix well.

Cut the pineapple into small cubes and fold into the cilantro lime mixture to create the salsa.

Grill the shrimp until they are pink and cooked through, about 5-7 minutes.

Warm the flour tortillas on the grill or in a pan until they are soft and pliable.

Slice the avocado thinly.

Assemble the tacos by dividing the shrimp among the tortillas, topping with avocado slices, pineapple cilantro salsa, and pickled red onions.
