Sesame Ginger Soba with Soft-Boiled Eggs recipe

This dish is a twist on classic udon noodles. We use soba noodles and mix them with a sesame ginger sauce. Soft-boiled eggs and green onions add a yummy touch. It's a warm, tasty meal that's easy to make!

Ingredients

400 g Soba noodles
4 large eggs
2 tablespoons sesame oil
1 tablespoon grated ginger
2 tablespoons soy sauce
1 tablespoon honey
1 tablespoon rice vinegar
2 tablespoons tahini paste
1 tablespoon white miso paste
2 green onions, thinly sliced
1 tablespoon sesame seeds
1 sheet of nori, cut into thin strips

Method

Bring a pot of water to a boil, then gently lower the eggs into the water. Cook for 6 1/2 minutes for soft-boiled eggs. Transfer eggs to an ice bath to cool.

In the same boiling water, cook the soba noodles according to the package instructions, then drain and rinse under cold water to stop the cooking process.

In a small bowl, whisk together sesame oil, grated ginger, soy sauce, honey, rice vinegar, tahini paste, and white miso paste until well combined.

In a large pan over medium heat, toss the cooked soba noodles with the sesame ginger sauce, heating through for about 2 minutes.

Peel the soft-boiled eggs and cut them in half.

Divide the noodles among four bowls. Top each with two egg halves, a sprinkle of sliced green onions, sesame seeds, and nori strips.
