Sesame Ginger Chicken Noodle Bowl with Vegetables recipe


This is a yummy noodle bowl with chicken and fresh veggies. It has tasty sesame and ginger flavors. You cook chicken, then add veggies and sauce. Mix with noodles and top with more veggies. It's good for lunch or dinner!


450 g chicken breasts, boneless skinless
1 English cucumber
1 small bunch green onions (scallions)
120 ml sesame ginger dressing
200 g shredded purple cabbage
200 g sugar snap peas
1/4 teaspoon ground black pepper
200 g flat rice noodles
1/2 teaspoon salt
1 tablespoon soy sauce
1 tablespoon vegetable oil
1 tablespoon sesame seeds


Fill a large pot with hot tap water, cover, and bring to a boil. Turn off the heat, add rice noodles, and soak for 10 minutes or as the package directs. Drain and rinse with cold water.
Wash and dry the cucumber, green onions, and sugar snap peas.
Cut the green onions into thin slices and set aside in a bowl.
Trim the sugar snap peas and cut them in half. Add them to the onions.
Heat a skillet over medium-high heat. Cut the chicken into bite-sized pieces and season with salt and pepper.
Add oil to the hot skillet and cook the chicken until golden, about 4 minutes.
Put the green onions and snap peas into the skillet. Cook until the veggies are tender and the chicken is done, about 4 more minutes.
Cut the cucumber in half lengthwise, then slice into half-moons.
Mix the sesame ginger dressing, soy sauce, and a splash of water into the skillet. Cook until the sauce is hot and a bit thicker, about 3 minutes.
Add the noodles to the skillet, toss everything together, and turn off the heat.
Put the noodles, chicken, and veggies into bowls. Top with cucumber slices, shredded purple cabbage, and sprinkle with sesame seeds. Now it's ready to eat!
