This is a yummy dinner with a big piece of steak and colorful veggies. The steak is cooked until it's just right. The veggies are cooked with garlic and thyme to make them taste really good. It's a fancy meal that's not too hard to make!

Ingredients

4 (6-ounce) rib eye steaks
1 teaspoon sea salt
1/2 teaspoon ground black pepper
1 tablespoon olive oil
2 tablespoons unsalted butter
3 medium carrots, peeled and sliced
1/2 lb green beans, ends trimmed
1 yellow bell pepper, seeded and sliced
4 cloves garlic, minced
1 teaspoon fresh thyme leaves

Method

Season the rib eye steaks with sea salt and black pepper on both sides.

Heat a skillet over medium-high heat and add olive oil.

Place the steaks in the skillet and cook for about 4-5 minutes per side for medium-rare, or until desired doneness.

Transfer the steaks to a plate and cover with foil to keep warm.

In the same skillet, reduce heat to medium and melt the butter.

Add the minced garlic and thyme leaves, cooking until fragrant, about 1 minute.

Add the sliced carrots, green beans, and yellow bell pepper to the skillet.

Cook the vegetables, stirring often, until they are tender-crisp, about 6-7 minutes.

Season the vegetables with a pinch of salt and pepper, and toss to combine.

Serve the steaks with the garlic thyme vegetables on the side.
