These are fluffy pancakes made with pumpkin puree and a touch of cinnamon. They're topped with crispy turkey slices and sweet maple syrup. It's a warm, yummy meal that feels like a hug on a plate!

Ingredients

300 g Pumpkin Puree
220 g All-Purpose Flour
2 Large Eggs
1 Tsp Ground Cinnamon
50 g Shredded Cheddar Cheese
6 Turkey Bacon Strips
3 Tbsp Maple Syrup
300 ml Skim Milk
2 Tbsp Vegetable Oil
1 Tsp Baking Powder
1/2 Tsp Salt

Method

Preheat your oven to 180°C (356°F) for the turkey bacon.

Lay the turkey bacon strips on a baking sheet and bake for 15 minutes or until crispy. Once done, set aside.

In a large bowl, whisk together the pumpkin puree, eggs, skim milk, and vegetable oil until well combined.

In another bowl, mix the all-purpose flour, baking powder, ground cinnamon, and salt.

Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.

Fold in the shredded cheddar cheese into the batter.

Heat a non-stick pan over medium heat and lightly oil it.

Pour 1/4 cup of batter for each pancake onto the hot pan. Cook for about 4 minutes on one side, or until bubbles form on the surface. Flip and cook for another 4 minutes or until golden brown.

Serve the pancakes in stacks with crispy turkey bacon on top and a drizzle of maple syrup.
