Sausages & Broccoli Puree with Caramelized Shallot Sauce recipe

This is a yummy dish with sausages and a smooth broccoli puree. The sauce is made with sweet shallots. You cook the sausages and blend the broccoli to make it soft. Then you make the sauce with shallots and put it all together.

Ingredients

1 large head broccoli
240 ml chicken or vegetable broth
3 cloves garlic
1 small bunch chives
6 pork sausages
2 large shallots
1/4 tsp black pepper
2 tbsp unsalted butter
1 tbsp all-purpose flour
1/2 tsp salt
1 tbsp olive oil

Method

Fill a large pot with water, cover, and bring to a boil.

Wash the broccoli and cut into florets. Peel and chop the stem into smaller pieces.

Add broccoli to the boiling water and cook until very tender, about 7 minutes.

While the broccoli is cooking, heat a skillet over medium-high heat with 1 tbsp olive oil.

Add sausages to the skillet and cook until browned on all sides, about 3 minutes per side. Reduce heat to medium and continue cooking until done, about 7 minutes. Transfer to a plate.

Peel and mince 3 cloves of garlic. Thinly slice shallots into rings.

Using the same skillet, reduce heat to medium-low, add butter and shallots. Cook, stirring often, until shallots are softened and caramelized, about 15 minutes.

Drain the broccoli in a colander, then return to the pot. Add minced garlic, 1 tbsp butter, 1/2 tsp salt, and 1/4 tsp black pepper. Blend using a hand blender or potato masher until smooth.

Sprinkle caramelized shallots with flour and stir until evenly incorporated.

Slowly pour in broth while stirring, and cook until the sauce has thickened, about 5 minutes. Season with more salt and pepper if needed.

Wash and dry chives. Chop them finely.

To serve, place broccoli puree on plates. Add sausages and top with caramelized shallot sauce. Garnish with chopped chives.
