Salmon with Avocado-Citrus Salsa and Herbed Rice recipe

This is a yummy fish dish with a fresh salsa and tasty rice. The salmon is cooked until it's just right. The salsa has avocado and grapefruit. The rice has lime and cilantro. It's a good dinner for your family.

Ingredients

1 avocado, diced
1 grapefruit, segmented and diced
1 lime, juiced
1/2 small bunch cilantro, minced
1/2 medium red onion, finely chopped
3/4 lb salmon fillet
1/4 tsp black pepper
1/4 tsp crushed red pepper
2 tbsp extra virgin olive oil
1/2 tsp paprika
1/2 tsp salt
1 cup jasmine rice

Preheat the oven to 400°F (200°C).

In a small saucepan, heat 1 tablespoon of olive oil over medium heat. Add half of the chopped red onion and cook until softened, about 4-5 minutes.

Rub the salmon fillet with a mixture of 1 tablespoon olive oil, paprika, salt, and black pepper. Place in a baking dish and roast in the oven until opaque in the center, about 15-20 minutes.

Add jasmine rice and 2 cups of water to the saucepan with the softened onion; bring to a boil. Once boiling, cover and reduce heat to low. Cook until the liquid is absorbed, about 15-18 minutes. Remove from heat and let stand, covered, for 5 minutes.

In a medium bowl, combine the diced avocado, grapefruit segments, half of the minced cilantro, lime juice, crushed red pepper, and a pinch of salt and pepper to make the salsa.

Fluff the cooked rice with a fork and stir in the remaining cilantro. Season with additional lime juice, olive oil, salt, and pepper to taste.

Serve the roasted salmon with herbed rice and spoon the avocado-citrus salsa over the top.
