This is a yummy pasta with pieces of salmon mixed in. It has peas and a lemony taste. You cook the pasta and salmon, then mix them with peas, lemon, and a creamy sauce.

Ingredients

240 g wholewheat penne
3 x 120 g salmon fillets
1 tbsp extra virgin olive oil
1 onion, thinly sliced
2 cloves garlic, crushed
125 ml vegetable stock
100 ml reduced fat crème fraîche
200 g frozen peas
1/2 small bunch of fresh parsley, roughly chopped
1 lemon, zested and juiced

Method

Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente.

While the pasta is cooking, heat the olive oil in a large frying pan over medium-high heat. Add the onion and cook for 5 minutes until golden and softened. Stir in the garlic and cook for 1 minute until fragrant.

Place the salmon fillets on a steamer or colander over the pasta pot, cover with a lid, and steam for about 10 minutes or until cooked through. Once done, remove the skin and flake the salmon into large pieces.

In the frying pan with the onion and garlic, pour in the vegetable stock and crème fraîche. Bring to a simmer and add the frozen peas. Cook for 2 minutes until the peas are tender.

Drain the pasta and add it to the frying pan with the sauce. Toss to coat the pasta evenly.

Gently fold in the flaked salmon, half of the chopped parsley, lemon zest, and a squeeze of lemon juice. Season with salt and pepper to taste.

Serve the salmon pasta in warm bowls, garnished with the remaining parsley.
