Roasted Vegetable and Feta Traybake recipe

This is a yummy dish with roasted veggies and cheese. We put peppers, tomatoes, zucchini, and onions on a tray. We add feta cheese and herbs. It cooks in the oven until it's all warm and tasty.

Ingredients

200 g zucchini, sliced into rounds
2 yellow bell peppers, chopped
400 g grape tomatoes
1 large red onion, sliced
200 g feta cheese, crumbled
1 handful of fresh oregano, chopped
1 handful of fresh parsley, chopped
2 tbsp olive oil
1 tsp dried rosemary
1/2 tsp crushed red pepper flakes
1/2 tsp salt
1/4 tsp black pepper
1 tbsp balsamic vinegar

Method

Preheat your oven to 200°C/392°F.

In a large baking tray, combine zucchini, yellow bell peppers, grape tomatoes, and red onion.

Sprinkle the vegetables with salt, black pepper, dried rosemary, and crushed red pepper flakes.

Drizzle olive oil and balsamic vinegar over the vegetables and toss to coat evenly.

Roast in the preheated oven for 20 minutes.

Remove the tray from the oven and sprinkle crumbled feta cheese over the vegetables.

Return the tray to the oven and roast for an additional 20 minutes, or until the vegetables are tender and the feta is slightly golden.

Take the tray out of the oven and sprinkle with fresh oregano and parsley before serving.
