Roasted Sweet Potato Salad with Cranberries, Walnuts & Veggie Patties recipe

This is a warm salad with roasted sweet potatoes, tangy cranberries, crunchy walnuts, and tasty veggie patties. It's a mix of sweet and savory flavors that you can eat for lunch or dinner. It's yummy and good for you!

Ingredients

1 whole garlic bulb
1 large sweet potato, cut into 1-inch cubes
1/2 cup dried cranberries
1/2 cup walnuts, roughly chopped
4 veggie patties
2 tablespoons maple syrup
1 tablespoon smoked paprika
3 tablespoons olive oil
1/4 cup fresh parsley, chopped
Salt and pepper to taste
2 tablespoons apple cider vinegar

Preheat the oven to 375°F (190°C). Wrap the garlic bulb in foil with a drizzle of olive oil and a pinch of salt, then seal the foil.

Place the sweet potato cubes on a baking sheet. Drizzle with 2 tablespoons of olive oil, maple syrup, smoked paprika, salt, and pepper. Toss to coat evenly.

Put the wrapped garlic bulb on the same baking sheet. Bake in the preheated oven for 25 minutes.

After 25 minutes, add the veggie patties to the baking sheet with the sweet potatoes and garlic. Bake for an additional 10 minutes, or until the patties are heated through and the sweet potatoes are tender.

While the sweet potatoes and patties are roasting, mix the apple cider vinegar with 1 tablespoon of olive oil in a large bowl to create a dressing. Season with salt and pepper.

Remove the roasted garlic from the oven, let it cool slightly, then squeeze the cloves into the dressing and whisk together.

Add the roasted sweet potatoes, dried cranberries, and walnuts to the bowl with the dressing. Toss to combine.

Chop the veggie patties into bite-sized pieces and add them to the salad. Toss gently to mix.

Garnish the salad with chopped parsley before serving.
