Roasted Sausage and Tomato Soup recipe


This is a warm, yummy soup with roasted tomatoes, garlic, and sausage. It's made in the oven and then mixed until it's very smooth. You eat it with bread and it makes you feel cozy.


2 Tbsp Balsamic Vinegar
1 Tbsp Dried Oregano
1 Small Bunch of Thyme
1 Loaf of Ciabatta
2 Yellow Peppers
1 Head of Garlic
8 Plum Tomatoes
1 Vegetable Stock Cube
200g Smoked Sausage


Preheat your oven to 200°C/392°F.
On a baking tray, place the plum tomatoes, yellow peppers cut into strips, a head of garlic (top sliced off to expose cloves), and sprinkle with dried oregano and thyme leaves. Drizzle with olive oil, season with salt and pepper, and roast in the oven for 30 minutes.
While the vegetables are roasting, slice the smoked sausage into 1/2 inch pieces and pan-fry in a skillet over medium heat until browned and crispy, about 10 minutes. Set aside.
Remove the roasted vegetables from the oven and squeeze the garlic out of its skin. Transfer all the roasted vegetables and garlic into a large pot.
Dissolve the vegetable stock cube in 500ml of hot water and add it to the pot with the roasted vegetables.
Add the balsamic vinegar to the pot and bring the mixture to a simmer.
Use a hand blender to puree the soup until smooth.
Serve the soup hot, topped with the crispy sausage pieces and with slices of toasted ciabatta on the side.
