This is a yummy fish dinner. You put salmon and sweet potatoes in the oven. They cook until they are soft and tasty. Then you put a special sauce and some crunchy things on top.

Ingredients

2 medium sweet potatoes, halved lengthwise
3 tablespoons extra virgin olive oil, divided
1/2 teaspoon kosher salt, plus more for seasoning
1 x 12 ounce skin-on salmon fillet
1 tablespoon fresh orange juice
1 tablespoon low-sodium soy sauce
1/2 teaspoon maple syrup
1/4 teaspoon toasted sesame oil
2 tablespoons chopped fresh dill
1 small Asian pear, cut into thin slices
Sliced scallions and toasted sesame seeds (for serving)

Method

Preheat oven to 325°F (163°C). Toss sweet potatoes with 1 tablespoon olive oil on a baking sheet; season with salt. Arrange cut side down and roast until tender, about 30–40 minutes.

In a small bowl, whisk together orange juice, soy sauce, maple syrup, sesame oil, and 1 tablespoon olive oil; season with a pinch of salt. Set aside as your dressing.

When sweet potatoes are halfway done, rub salmon with 1 tablespoon olive oil, place on a separate baking sheet; season with salt. Roast until just opaque in the center, about 16–18 minutes.

Break the roasted potatoes and salmon into large pieces. Arrange them on plates with the sliced Asian pear.

Drizzle with the orange-soy dressing, then garnish with chopped dill, scallions, and sesame seeds before serving.
