Roasted Garlic and Feta Crostini recipe

This is a yummy toast with soft cheese and sweet garlic. You cook garlic in the oven until it's soft. Then you put it on bread with cheese and cook it a little more. It's a tasty snack or starter!

Ingredients

4 bulbs of garlic
4 slices of ciabatta bread
150 g feta cheese, crumbled
1 tbsp olive oil
2 tbsp balsamic glaze
1/4 cup fresh basil leaves, chopped

Method

Preheat your oven to 180°C (350°F).

Cut the top off each garlic bulb to expose the cloves. Drizzle with olive oil, wrap in foil, and place on a baking sheet.

Roast the garlic in the preheated oven for 40 minutes or until cloves are soft and golden.

While the garlic is roasting, brush the ciabatta slices with olive oil and toast them in the oven for 5-10 minutes until they are golden and crispy.

Once the garlic is done, let it cool for a few minutes, then squeeze the soft garlic out of the skins and spread onto the toasted ciabatta slices.

Top each slice with crumbled feta cheese and return to the oven for about 5 minutes, or until the cheese is slightly melted.

Drizzle balsamic glaze over the crostini and sprinkle with chopped basil leaves before serving.
