This is a yummy dish made with butternut squash. The squash is cut into pieces and cooked in the oven until it's soft. It's mixed with a special sauce and cheese on top.

Ingredients

1 large butternut squash, peeled and cubed (about 4 cups)
2 tablespoons olive oil
1 tablespoon maple syrup
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 cup crumbled feta cheese
2 tablespoons chopped walnuts

Method

Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius).

Peel the butternut squash, remove the seeds, and cut it into 1-inch cubes.

In a large bowl, mix the olive oil, maple syrup, cinnamon, nutmeg, salt, and pepper.

Add the cubed squash to the bowl and toss until well coated with the mixture.

Spread the squash in a single layer on a baking sheet lined with parchment paper.

Roast in the preheated oven for 35-45 minutes, or until the squash is tender and the edges are starting to brown, stirring once halfway through.

Remove from the oven and let it cool for a few minutes.

Transfer the roasted squash to a serving dish, sprinkle with crumbled feta cheese and chopped walnuts before serving.
