Quinoa, Chicken & Mango Salad recipe


This is a yummy salad with quinoa, chicken, and mango. It has green leaves and a sweet dressing. You cook the chicken and quinoa, then mix everything in a big bowl. It's healthy and colorful!


200 g Quinoa
2 Chicken breasts
1 Ripe mango
2 Avocados
1 Red bell pepper
60 ml Lime juice
30 ml Honey
30 ml Extra virgin olive oil
1 head Romaine lettuce
Salt and pepper to taste


Cook the quinoa according to the package instructions, usually about 15 minutes in boiling water. Drain and let it cool.
While the quinoa is cooking, season the chicken breasts with salt and pepper. Cook them in a pan over medium heat for about 10 minutes on each side, or until fully cooked. Let them cool and then chop into bite-sized pieces.
Peel the mango and cut it into small cubes. Cut the avocados in half, remove the pit, and scoop out the flesh, cutting it into small cubes as well. Dice the red bell pepper.
In a small bowl, whisk together the lime juice, honey, and extra virgin olive oil to create the dressing. Season with salt and pepper to taste.
Chop the romaine lettuce and place it in a large salad bowl. Add the cooled quinoa, chicken, mango, avocado, and red bell pepper.
Pour the dressing over the salad and toss everything together until well mixed. Serve the salad immediately or chill in the refrigerator before serving.
