These pork tacos are a delicious meal with tender meat and tasty toppings. You cook the pork with spices and serve it in tortillas with pineapple, onion, and lime. It's a fun dish to make and eat!

Ingredients

1 tablespoon annatto seeds
1/2 teaspoon ground cloves
1 teaspoon ground cinnamon
1 teaspoon cumin seeds
1 teaspoon dried oregano
1 teaspoon black peppercorns
4 garlic cloves, minced
2 cups pineapple juice
2 tablespoons white vinegar
1 kg pork shoulder, cut into thin slices
2 tablespoons vegetable oil
1/2 fresh pineapple, cut into small chunks
8 corn tortillas
1/2 cup diced onion
1/4 cup chopped fresh cilantro
2 limes, cut into wedges

Method

Toast annatto seeds, ground cloves, ground cinnamon, cumin seeds, dried oregano, and black peppercorns in a dry pan over medium heat until fragrant.

Blend the toasted spices, minced garlic, pineapple juice, and white vinegar until smooth to create the marinade.

Place pork slices in a large bowl, pour the marinade over the meat, and refrigerate for at least 3 hours, preferably overnight.

Heat vegetable oil in a large skillet over medium-high heat. Cook the pork slices in batches until browned and cooked through, about 5-6 minutes per side.

In the same skillet, add the pineapple chunks and cook until caramelized, about 2-3 minutes.

Warm the corn tortillas in a dry skillet or microwave until soft and pliable.

Build the tacos by placing pork and pineapple on each tortilla, then top with diced onion and chopped cilantro.

Squeeze lime wedges over the tacos before serving.
