This is a yummy dish with rice, pork, pineapple, and veggies. It's like the chicken and egg fried rice but with sweet pineapple and pork. We cook it in a pan and eat it from a bowl. It's good for dinner and makes four people happy.

Ingredients

4 Green Onions
1 Tbsp Grated Ginger
1 Yellow Bell Pepper
2 Medium Carrots
3 Cloves of Garlic
400 g Diced Pork Loin
350 g Cooked Rice
150 g Frozen Corn
1 Cup Diced Pineapple
3 Eggs
3 Tbsp Teriyaki Sauce
2 Tbsp Vegetable Oil

Method

Slice the green onions, grate the ginger, chop the yellow bell pepper, dice the carrots, and mince the garlic.

Heat 1 tablespoon of vegetable oil in a large frying pan over medium heat. Cook the diced pork loin until browned on all sides.

Add the ginger, garlic, bell pepper, and carrots to the pan with the pork. Cook until the vegetables are softened, about 5 minutes.

Stir in the cooked rice, frozen corn, and diced pineapple. Cook for another 5 minutes to combine the flavors and heat everything through.

In a small bowl, beat the eggs. Push the rice mixture to one side of the pan and pour the eggs into the other side. Scramble the eggs until just set, then mix into the rice.

Drizzle the teriyaki sauce over the fried rice and stir to distribute evenly.

Serve the pork and pineapple fried rice in bowls, garnished with the sliced green onions.
