Pizza egg rolls with pepperoni and cheese inside wrappers and fried are a great snack or dinner idea.
Ingredients
4 c oil
12 egg roll wrappers (homemade or store bought)
1 c pepperoni
1 c spaghetti sauce
2 c mozzarella cheese
1/4 c water (to seal)
Method

On a cutting board lay an egg roll wrapper down. Spoon in a tbsp of sauce in the middle leaving 1" on each side empty.

Add cheese on top of sauce and any toppings.

Fold sides of egg roll wrapper in, then roll up. Wet finger and wipe water on edge of wrapper and seal closed.

Once they are all ready to be fried add oil to pan on med. high heat.

Once oil is hot, test with a pinch of wrapper into oil, if it immediately fries then it is ready.

Put filled rolls into oil and leave for 1-2 minutes on each side so they are browned nicely.

Put on paper towels when done so it can absorb oil.

** Air Fryer - Preheat to 380 for 5 minutesPrepare rolls and spray inside with oilLay inside and generously spray the top of your rolls with olive oilAir fry for a total of about 5 minutes, flip over halfway thru and spray tops again at that time until golden brown
