Pineapple Sweet and Sour Pork with Vegetables over Jasmine Rice recipe

This is a yummy dish with pork, pineapple, and veggies in a sweet and sour sauce. It's served over jasmine rice. You cook the rice, then cook the pork and veggies, and mix them with the sauce. Put it all together and it's ready to eat!

Ingredients

1 cup jasmine rice
2 crowns broccoli
3 medium carrots
16 fl oz pineapple juice
1 small bunch green onions
1 lb diced pork shoulder
1 red bell pepper
1/4 cup brown sugar
2 tbsp soy sauce
2 tbsp cornstarch
1/4 cup apple cider vinegar
1/4 tsp salt
2 tbsp vegetable oil
1 cup diced pineapple

Method

Rinse 1 cup jasmine rice under cold water, then cook with 2 cups of water according to package instructions.

Cut 2 crowns of broccoli into bite-sized florets and dice 3 medium carrots; set aside.

Thinly slice the white parts of 1 small bunch of green onions; set aside. Chop the green parts and keep separate.

Heat 2 tbsp vegetable oil in a large skillet over medium-high heat. Add 1 lb diced pork shoulder and cook until browned, about 5-7 minutes.

In a bowl, whisk together 16 fl oz pineapple juice, 1/4 cup brown sugar, 2 tbsp soy sauce, 2 tbsp cornstarch, 1/4 cup apple cider vinegar, and 1/4 tsp salt to make the sauce.

Add the broccoli, carrots, and red bell pepper to the pork. Cook for about 5 minutes until vegetables are tender.

Pour the sauce into the skillet with the pork and vegetables. Add 1 cup diced pineapple. Cook, stirring, until the sauce thickens, about 3-4 minutes.

Serve the pork and vegetables over the cooked jasmine rice. Garnish with the green parts of the green onions.
