This is a tangy and slightly sweet recipe for making pickled onions. You slice red onions and mix them with vinegar and spices. They turn bright pink and taste yummy!


1 large red onion, thinly sliced
3/4 cup white wine vinegar
1/4 cup water
1 Tbsp honey
1 tsp kosher salt
1/2 tsp black peppercorns
1/4 tsp coriander seeds
1 bay leaf


In a small saucepan, combine the white wine vinegar, water, honey, kosher salt, black peppercorns, coriander seeds, and bay leaf. Bring the mixture to a simmer over medium heat, stirring until the honey and salt are fully dissolved.
While the mixture is heating, place the thinly sliced red onion in a heatproof jar or bowl.
Once the vinegar mixture is ready, pour it over the sliced onions, making sure they are completely submerged. If necessary, use a spoon to press the onions down into the liquid.
Allow the onions to cool to room temperature, then cover and refrigerate for at least 1 hour before serving. The pickled onions will keep in the refrigerator for up to 2 weeks.
