Pear Quinoa Salad with Walnuts and Blueberries recipe

This is a yummy salad with quinoa, pears, crunchy walnuts, and sweet blueberries. It's mixed with a tangy orange dressing. You cook quinoa, chop pears and mix it all with nuts and berries. Then you pour the dressing on top and eat!

Ingredients

1/2 cup walnuts
2 Bosc pears
240 ml vegetable broth
1/2 cup fresh blueberries
1 cup quinoa
2 tablespoons orange juice
1 tablespoon maple syrup
1 tablespoon extra virgin olive oil
1/4 teaspoon salt
1/4 teaspoon black pepper
4 sticks celery
1 small bunch fresh mint

Method

In a small saucepan, combine 1 cup quinoa and 240 ml vegetable broth. Bring to a boil, then reduce heat to a simmer, cover, and cook for 15 minutes. Remove from heat and let stand, covered, for 5 minutes.

While the quinoa is cooking, wash and dry the celery and mint. Core and medium dice the pears. Trim ends and medium dice the celery. Pick mint leaves off the stems; discard the stems and chop the leaves.

In a dry skillet over medium heat, toast 1/2 cup walnuts until fragrant, about 3 minutes. Let them cool, then roughly chop.

In a small bowl, whisk together 2 tablespoons orange juice, 1 tablespoon olive oil, 1 tablespoon maple syrup, 1/4 teaspoon salt, and 1/4 teaspoon black pepper to make the dressing.

Fluff the cooked quinoa with a fork and transfer it to a large bowl. Add the diced pears, chopped celery, toasted walnuts, and 1/2 cup fresh blueberries.

Pour the orange dressing over the salad and toss to combine. Garnish with chopped mint.

To serve, divide the salad among plates. Enjoy your fresh and fruity quinoa salad!
