Pear-Gouda Grilled Cheese with Spicy Tomato Soup recipe

This is a yummy sandwich with cheese and sweet pear slices. It comes with a warm tomato soup that has a little spice. You cook the sandwich until it's crispy and the cheese melts. The soup is smooth and tastes great with the sandwich.

Ingredients

8 slices of sourdough bread
2 ripe pears
227 g of Gouda cheese
4 tbsp unsalted butter
1/2 tsp smoked paprika
1/2 tsp chili flakes
2 x 398 ml cans of diced tomatoes
480 ml vegetable broth
1/2 medium red onion
2 cloves garlic
Salt to taste
Black pepper to taste

Method

Wash and dry the pears and fresh produce.

Quarter the pears lengthwise, remove the core, and then slice into thin wedges.

Trim, peel, and finely chop the red onion and garlic.

Grate the Gouda cheese.

In a saucepan over medium heat, melt 1 tablespoon of butter.

Add the red onion, garlic, smoked paprika, and chili flakes to the saucepan; cook until the onion is soft, about 5 minutes.

Pour in the diced tomatoes and vegetable broth, season with salt and pepper, and bring to a simmer for 10 minutes.

While the soup simmers, butter one side of each bread slice.

On the non-buttered side of 4 bread slices, evenly distribute the pear slices and grated Gouda, then top with the remaining bread slices, buttered side up.

Heat a skillet over medium heat and cook the sandwiches for 3-4 minutes on each side until golden brown and the cheese is melted.

Use an immersion blender to puree the soup until smooth.

Serve each grilled cheese sandwich with a bowl of the spicy tomato soup.
