This is a yummy sandwich with tuna, sweet pears, and almonds. It's mixed with a tangy dressing and put on toasted bread. There's also a fresh salad with different greens and a simple dressing.

Ingredients

2 sticks celery
2 x (170 g) cans chunk light tuna in water
1/3 cup dried cranberries
2 ripe Bartlett pears
1/2 cup plain Greek yogurt
2 tablespoons honey mustard
4 cups mixed salad greens
1/3 cup sliced almonds
8 slices sourdough bread
1 tablespoon olive oil
1/4 teaspoon garlic powder
1/4 teaspoon salt

Wash and dry the fresh produce.

In a medium bowl, mix together the Greek yogurt, honey mustard, garlic powder, and salt to create the dressing.

Trim and small dice the celery. Add to the bowl with the dressing.

Core and chop the pears into small pieces. Add to the bowl along with the dried cranberries.

Drain the tuna and flake into bite-sized pieces. Add to the bowl and stir to combine everything well.

Toast the sourdough bread slices until golden and crispy, either in a toaster or under the broiler for about 2 minutes, flipping halfway through.

In a separate bowl, toss the mixed salad greens with olive oil and a pinch of salt.

Sprinkle the sliced almonds over the mixed greens and toss lightly.

To assemble, divide the toasted bread among plates and top each with an even amount of the tuna salad mixture.

Serve each sandwich with a portion of the mixed greens salad on the side.
