Peachy Chicken Salad with Mixed Greens & Toasted Pita recipe


This is a yummy salad with chicken, peaches, and greens. You mix chicken with sweet peaches and crunchy nuts. Then you put it on top of fresh greens. Eat it with warm, toasty pita bread.


1 lb chicken breasts, boneless skinless
1/4 cup walnuts, chopped
5 oz mixed greens
2 sticks celery
1/3 cup plain Greek yogurt
4 medium peaches, diced
1 small bunch chives, chopped
4 whole wheat pita breads
1/4 tsp black pepper
1 tbsp Dijon mustard
1 tbsp extra virgin olive oil
2 tsp honey
1/4 tsp salt


Place the chicken breasts in a pot and season with salt and pepper. Cover with water, bring to a boil, then reduce heat, cover, and simmer until cooked through, about 12-15 minutes. Remove from water and let cool.
While the chicken is cooling, heat a skillet over medium heat. Add the chopped walnuts and toast them, stirring often, until they're golden and fragrant, about 3-4 minutes. Remove from heat and let cool.
In a large bowl, whisk together the Greek yogurt, Dijon mustard, honey, salt, and black pepper to make the dressing.
Dice the cooled chicken into small pieces and add to the bowl with the dressing.
Wash and dice the celery and chives, then add them to the bowl along with the diced peaches and toasted walnuts. Toss everything together until well mixed.
Wash the mixed greens and arrange them on plates.
Toast the pita breads until warm and slightly crispy.
Top the greens with the chicken salad mixture.
Serve each plate with a toasted pita bread on the side.
