This Peach Pie is a sweet treat with juicy peaches and a flaky crust. It's a dessert that's perfect for a summer day. You mix peaches with sugar and spices, then bake them in a pie crust until golden.

Ingredients

2 refrigerated pie crusts
5 1/2 cups peaches (peeled and sliced)
1 tablespoon lemon juice
1 teaspoon vanilla extract
1/2 cup all-purpose flour
1/2 cup granulated sugar
1/2 cup brown sugar
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon salt
1 tablespoon water
2 tablespoons cold butter (cubed)
Cinnamon sugar for sprinkling (optional)

Method

Preheat the oven to 425°F (220°C).

In a large bowl, toss the sliced peaches with lemon juice and vanilla extract. Let them sit in a colander to drain excess juices.

In another bowl, mix together the flour, granulated sugar, brown sugar, cinnamon, nutmeg, and salt.

Add the dry ingredients to the peaches and toss to coat evenly.

Place one pie crust into a 9-inch pie plate. Brush the crust with a mixture of 1 tablespoon water and a beaten egg.

Pour the peach mixture into the crust, and dot with cubed butter.

Cover with the second pie crust, seal the edges, and make slits in the top to vent. Brush the top crust with the remaining egg wash and sprinkle with cinnamon sugar, if using.

Bake in the preheated oven for 10 minutes. Then, reduce the temperature to 350°F (175°C) and bake for an additional 30-35 minutes, or until the crust is golden brown. If the edges brown too quickly, cover them with foil or a pie shield.

Remove the pie from the oven and let it cool before serving.
