This is a yummy pasta dish with a sauce made from ground turkey, tomatoes, and veggies. You cook the meat, add veggies, then mix in tomatoes and spices. Boil pasta, mix with sauce, and sprinkle cheese on top!

Ingredients

150 g Smoked Turkey Bacon
2 Medium Onions
2 Medium Carrots
2 Stalks of Celery
4 Garlic Cloves
500 g Ground Turkey
150 ml White Wine
350 ml Chicken Stock
2 tbsp Tomato Paste
1 x (400 g) Can of Crushed Tomatoes
1 tsp Dried Oregano
1 tsp Dried Basil
500 g Whole Wheat Spaghetti
2 tbsp Olive Oil
50 g Grated Mozzarella Cheese

Method

1
Heat a large saucepan over medium heat and add 1 tbsp of olive oil. Put in the turkey bacon and cook until it's crispy, then take it out and set aside.
2
Chop the onions, carrots, celery, and garlic finely. Add another tbsp of olive oil to the pan and cook the veggies for about 8 minutes until they're soft.
3
Increase the heat to high and add the ground turkey to the pan. Break it apart with a spoon and cook until it's no longer pink.
4
Pour in the white wine and let it reduce by half. Then add the chicken stock, tomato paste, and crushed tomatoes. Season with oregano, basil, and some salt and pepper.
5
Bring the sauce to a boil, then lower the heat and let it simmer for about 1 hour and 30 minutes. If the sauce gets too thick, add a little water.
6
While the sauce is simmering, cook the whole wheat spaghetti in a large pot of boiling salted water according to the package instructions, then drain.
7
Cut the cooked turkey bacon into small pieces and stir it into the sauce.
8
Mix the cooked pasta with the sauce, divide it into bowls, and sprinkle grated mozzarella cheese on top before serving.
