Pasta with Spicy Sausage and Tomato Sauce recipe

This is a yummy pasta dish with spicy sausage and a rich tomato sauce. You cook pasta and mix it with sausage, tomatoes, and cheese. It's a warm, filling meal that tastes great.

Ingredients

4 Good Quality Pork Sausages
1 tsp Dried Oregano
1/2 tsp Red Pepper Flakes
350 g Penne Pasta
3 Garlic Cloves, minced
1 can (400 g) Diced Tomatoes
120 ml Red Wine
30 g Grated Parmesan Cheese
2 Tbsp Olive Oil
Salt to taste
Fresh Basil Leaves for garnish

Fill a large pot with water, add a pinch of salt, and bring to a boil. Cook the penne pasta according to package instructions until al dente, then drain, reserving 1/2 cup of pasta water.

While the pasta is cooking, heat 1 tablespoon of olive oil in a large pan over medium heat. Squeeze the sausage meat out of the casings and into the pan, breaking it up into small pieces. Cook for about 5 minutes until browned, then transfer to a plate.

In the same pan, add the remaining tablespoon of olive oil, minced garlic, dried oregano, and red pepper flakes. Sauté for 1 minute until fragrant, being careful not to burn the garlic.

Pour in the red wine to deglaze the pan, scraping up any browned bits from the bottom. Allow the wine to reduce by half, about 2 minutes.

Stir in the diced tomatoes and bring the sauce to a simmer. Cook for 5 minutes, then return the sausage to the pan. Season with salt to taste.

Add the cooked penne to the sauce, tossing to coat. If the sauce is too thick, add a little reserved pasta water to reach desired consistency.

Serve the pasta in bowls, topped with grated Parmesan cheese and fresh basil leaves.
