This is a warm, creamy soup made with parsnips and sweet pears. It's cooked with herbs and blended until smooth. You can eat it with bread for a cozy meal.

Ingredients

3 medium parsnips, peeled and chopped
1 large onion, chopped
1 stalk of celery, chopped
4 cloves of garlic, minced
2 ripe pears, cored and chopped
1 teaspoon dried thyme
2 bay leaves
1.2 liters of chicken stock
240 ml heavy cream
30 g unsalted butter
1 tablespoon olive oil
Salt and pepper to taste

Method

In a large pot, heat the olive oil over medium heat. Add the onions and celery, and cook for about 10 minutes until they are soft.

Stir in the minced garlic, chopped parsnips, and pears, then add the dried thyme and bay leaves. Cook for another 5 minutes.

Pour in the chicken stock and bring the mixture to a boil. Reduce the heat and simmer for 20 minutes with the lid on, until the parsnips are tender.

Remove the bay leaves. Use a hand blender to puree the soup until it's completely smooth.

Stir in the heavy cream and heat through. Season the soup with salt and pepper to taste.

In a small pan, melt the butter over medium heat until it starts to foam. Cook until it turns a light brown color, then remove from heat.

Serve the soup in bowls, drizzle with the browned butter, and if desired, garnish with a sprig of fresh thyme. Enjoy with a slice of crusty bread.
