This is a yummy steak with a sweet peach salsa on top. It comes with a fresh salad made of arugula and cherry tomatoes. You cook the steak in a pan and mix the salsa with peaches and peppers.

Ingredients

4 (6 oz) ribeye steaks
1 tsp salt
1 tsp black pepper
2 tbsp olive oil
2 ripe peaches
1 small red bell pepper
1/4 cup red onion
1 tbsp chopped fresh cilantro
1 tbsp honey
Juice of 1 lemon
5 oz arugula
1 cup cherry tomatoes
1 tbsp balsamic vinegar

Method

Season the steaks with salt and pepper.

Heat olive oil in a large skillet over medium-high heat.

Add the steaks to the skillet and cook for 4-5 minutes per side for medium-rare, or until desired doneness.

While the steaks are cooking, dice the peaches and red bell pepper, and finely chop the red onion.

In a bowl, combine the diced peaches, red bell pepper, red onion, chopped cilantro, honey, and lemon juice to create the peach salsa.

In another bowl, toss the arugula and cherry tomatoes with balsamic vinegar for the salad.

Once the steaks are done, let them rest for a few minutes.

Serve each steak with a generous spoonful of peach salsa on top and a side of arugula salad.
