Oven-Roasted Honey Mustard Salmon with Garlic Green Beans and Quinoa recipe

This is a yummy fish dish with a sweet and tangy honey mustard glaze. It comes with tasty green beans and fluffy quinoa. It's cooked in the oven and is very easy to make!

Ingredients

4 (6 oz) salmon fillets
2 tablespoons honey
2 tablespoons Dijon mustard
1 tablespoon olive oil
1/2 teaspoon paprika
1/4 teaspoon black pepper
1/2 teaspoon garlic powder
1 pound green beans, trimmed
1 tablespoon minced garlic
1 cup quinoa
2 cups water
1/2 teaspoon salt

Method

Preheat oven to 425°F (220°C).

In a small bowl, mix together honey, Dijon mustard, paprika, black pepper, and garlic powder to create the honey mustard glaze.

Place the salmon fillets on one half of a baking sheet lined with parchment paper. Brush the honey mustard glaze over the salmon fillets.

In a medium saucepan, combine quinoa, water, and salt. Bring to a boil, then cover, reduce heat to low, and simmer until quinoa is fluffy and water is absorbed, about 15 minutes. Remove from heat and let stand for 5 minutes, then fluff with a fork.

Toss green beans with olive oil and minced garlic, then place them on the other half of the baking sheet.

Place the baking sheet in the preheated oven and roast until the salmon is cooked through and green beans are tender, about 12-15 minutes.

To serve, divide the quinoa among plates, top with a salmon fillet, and add a serving of garlic green beans on the side. Enjoy!
